Create macros for converters.

AC_CHECK_HEADER -> AC_CHECK_HEADERS when there are several headers to check
Use PKG_CHECK_EXISTS macro.
Add AC_HELP_STRING to AC_ARG_ENABLE, and fix some default enable/disable.

It seems libtool on certain platforms (or possibly certain versions) no longer
...
support the --version arg to libtool. Using libtoolize instead solves the
problem.
